    About this recipe: Several family members (including me) have to follow a gluten and dairy-free diet because of allergies, which makes these brownies ideal. They're inspired by the original brownie recipe which in itself doesn't contain any dairy. They were an instant hit the first time I made them.

    Ingredients
    Serves: 16 

    • 100g dark chocolate
    • 225g cane sugar
    • 2 eggs, lightly beaten
    • 1 teaspoon vanilla extract
    • 1 teaspoon bicarbonate of soda
    • 1/4 teaspoon salt
    • 120g gluten-free or rice flour

    Method
    Prep:10min  ›  Cook:25min  ›  Extra time:20min cooling  ›  Ready in:55min 

    1. Preheat the oven to 170 C / Gas 3. Grease baking tin with oil and dust with flour.
    2. Melt the chocolate “au bain marie”, in a bowl over hot water. Add the sugar and eggs and combine thoroughly, then stir in the vanilla extract.
    3. Add the bicarbonate of soda and salt and stir again. Add the flour and stir until all the ingredients are well mixed.
    4. Put the mixture into the baking tin and spread out evenly.
    5. Bake for 20 to 25 minutes. Check with a skewer; if it comes out clean the brownies are done.

    Serving suggestion

    Serve with a scoop of raspberry sorbet, it makes for a lovely dessert.

    Although this recipe doesn't contain any fat it keeps for a couple of days and still tastes good. Easy to make. - 19 Nov 2012

    I had exactly the same problem as Jen1995. Rises really high, gets a nice crust on top and then nothing! Mixture everywhere. I tried taking the crust off to see if it would help the mixture underneath cook but it just collapsed into nothing. - 11 Sep 2016
