High Speed Mum's summer garden salad

    Deciding to serve a salad with our sardines for lunch today I wandered out into the garden with my scissors and this recipe is the result. A green salad with a bewitching combination of flavours. I also cut up a plate of onion, red tomato and cucumber and sprinkled raspberries over it, just to give a bit of variety. The only things I bought were the olives and the red tomatoes.

    Serves: 2 

    • 3 lettuce leaves
    • 3 spinach leaves
    • 2 sprigs thyme flowers
    • 1 sprig lavender flowers
    • a few olives
    • 1 shoot Welsh onion
    • 2 green tomatoes
    • 1 sprig lemon balm

    1. Wash and thinly slice up the lettuce and spinach leaves.
    2. Take the herb flowers off the stalks. Put sliced up leaves into a bowl and sprinkle on the herb flowers and olives.
    3. Cut up Welsh onion and sprinkle over the salad.
    4. Thinly slice the green tomatoes and arrange around the edge of the bowl.
    5. Take lemon balm leaves off the stalk and place around the edge of the bowl between the slices of green tomato.
