    About this recipe: This is a very chocolaty cake pudding. My whole family loved it! Best served with chilled custard or vanilla ice cream.

    Ingredients
    Serves: 16 

    • 250ml hot water
    • 65g instant hot chocolate powder
    • 125ml sunflower oil
    • 1 teaspoon vanilla extract
    • 3 eggs
    • 315g caster sugar
    • 265g plain flour
    • 2 tablespoons baking powder
    • Pinch salt
    • For the syrup
    • 315g caster sugar
    • 375ml water
    • 1 tablespoon instant hot chocolate powder
    • 1 teaspoon vanilla extract

    Method

    1. Preheat the oven to 180 C / Gas 4. Prepare a shallow square ovenproof dish with cooking spray.
    2. Mix together the hot water, the 65g hot chocolate powder, oil and vanilla. Set aside to cool a little.
    3. Beat together the eggs and 315g sugar.
    4. Sift together the flour, baking powder and salt. Add to the other ingredients and mix well to combine. Pour the cake mixture into the prepared dish.
    5. Bake in the preheated oven until a skewer inserted near the centre comes out clean, about 30 minutes.
    6. In a saucepan, heat the syrup ingredients over moderate heat for 5 minutes. Set aside to cool.
    7. Once the cake is set, remove from oven, keeping it in the dish, and prick all over with a fork. Pour over the syrup, set cake aside to cool, then serve with chilled custard or ice cream.

    Substitution

    You can use light brown soft sugar instead of caster sugar, but it changes the taste just a little bit.

    I have made this recipe many times and thought it tasted great : ) but I personally used less syrup. - 25 Dec 2015
