Simple summer salad

    This salad couldn't be simpler, but is a delicious accompaniment to barbecued meats, kebabs or fish.

    Serves: 6 

    • 5 tomatoes
    • 4 green peppers
    • 1 large red onion
    • 1 bottle Italian salad dressing

    1. Slice tomatoes and peppers and set aside. Slice the red onion and separate the rings.
    2. Using a large bowl with a lid, layer the tomatoes, green pepper and onion until all vegetables are used. Shake the bottled dressing and pour desired amount over the vegetables. Refrigerate for 2 to 3 hours or, for best results, overnight.
    3. Before serving, shake bowl to ensure all vegetables are coated with the dressing.

    My mother used to make this with cucumbers instead of peppers. It was always one of my favourite side dishes!  -  15 Sep 2008


    Very delicous, it was simple, yet elegant. Although there was a little overload on the peppers, and too little tomatoes. This recipe isnt really anything special though.  -  15 Sep 2008
