Rinse and pat dry the chicken with absorbent paper. Place into a non-metallic oven dish.
In a bowl combine and mix well all the remaining ingredients. Pour over the chicken turning around to coat well. Cover with cling film and chill for a minimum of 1 hour or overnight.
Pre-heat the oven to 190 C / Gas 5. Bake the chicken for 40 minutes or until cooked through. Remove the chicken from the dish and finish off by grilling both sides for 3 minutes each side to crisp up all sides. Serve with a lemon wedge and salad and chips.
