Maple syrup cookies

    Heavenly cookies that always remind me of the time I spent in the States, when I ate far too many pancakes with maple syrup!

    Serves: 16 

    • 180g butter, melted
    • 200g caster sugar, plus more for rolling
    • 1 large egg
    • 60ml maple syrup
    • 240g plain flour
    • 1/2 teaspoon vanilla extract
    • 1/2 teaspoon salt
    • 2 teaspoons baking powder

    1. Melt the butter and mix with the sugar. Let it cool.
    2. Once cool, mix in the eggs, and then the other ingredients. Cover and chill in the fridge for at least an hour.
    3. Preheat the oven to 180 C / Gas 4.
    4. Form the dough into small balls, roll them in sugar and flatten slightly. Place on a baking tray.
    5. Bake until golden, 10 to 12 minutes. Remove straight away to rack to cool.

    I felt this would not have much of a maple syrup flavour as so little used so adjusted amounts of syrup (more), sugar (less), flour(more) and they were nice enough - didn't think necessary to roll in sugar before cooking as there is enough sugar anyway!  -  22 Oct 2013
