Almond and white chocolate cookies

    Sweet cookies that remind me of marzipan! Ground almonds give them a lovely, moist and delicate texture.

    Serves: 24 

    • 180g butter, melted
    • 200g caster sugar
    • 1/2 teaspoon vanilla extract
    • 1/2 teaspoon almond extract
    • 2 tablespoons golden syrup
    • 90g ground almonds
    • 1/2 teaspoon baking powder
    • 1 egg
    • 240g plain flour
    • 1 bag white chocolate chips

    1. Melt the butter and mix with sugar, vanilla, almond extract and syrup. Mix well, then add ground almonds and baking powder.
    2. Mix in the beaten egg, and mix the flour in, until blended. Leave dough to sit for 10 to 15 minutes to firm up.
    3. Preheat the oven to 180 C / Gas 4.
    4. Form the dough into small balls and flatten slightly. Press a white chocolate chip into the center of the cookie.
    5. Bake until edges just start turning golden, about 10 minutes.
    6. Remove from oven and leave on cookie tray for 2 minutes, before transferring to wire rack to cool.


    Leaving the cookies on the tray for 2 minutes when they come out of the oven helps them finish baking without colouring, and stops them breaking when you transfer to the wire rack!
