Cranberry and oatmeal cookies

    Spicy, chunky cookies - great with morning coffee, or as a change to boring breakfast bars. Tart cranberries really sparkle in this cookie.

    Serves: 24 

    • 240g butter, melted
    • 180g light brown soft sugar
    • 180g caster sugar
    • 2 eggs
    • 1/2 teaspoon baking powder
    • 1/2 teaspoon bicarbonate of soda
    • 1/2 teaspoon salt
    • 1 pinch ground cinnamon (be generous)
    • 1 pinch ground nutmeg
    • 1 teaspoon vanilla extract
    • 240g plain flour
    • 225g dried cranberries
    • 130g rolled oats

    1. Preheat the oven to 180 C / Gas 4.
    2. Melt butter and mix in sugars. Leave to cool for 5 minutes.
    3. Add eggs, baking powder, bicarbonate of soda, salt, cinnamon, nutmeg and vanilla. Then add flour. Once mixed, add the cranberries and oats and mix everything well. Drop by teaspoonfuls onto a greased baking tray.
    4. Bake for 12 to 15 minutes.
    5. Cool on baking tray for 2 minutes, before transferring to wire rack to cool.
