Chorizo and tomato spaghetti

    Simple delicious midweek meal. Spaghetti in a chorizo, tomato and white wine sauce. Serve with fresh basil and garlic bread.

    Serves: 4 

    • olive oil
    • 1 onion, finely chopped
    • 1 handul finely diced chorizo
    • good glug white wine
    • 1 (400g) tin chopped tomatoes
    • 1 pinch dried oregano
    • good pinch paprika
    • seasoning
    • squirt of tomato puree
    • 1 vine ripened tomato, chopped
    • spaghetti, to serve
    • grated Parmesan cheese, to serve

    1. Heat a saucepan with olive oil to medium heat and pan fry the onion until translucent. Add the chorizo and cook for a couple of minutes.
    2. Add the wine and bubble for a minute. Add the tomatoes, oregano, paprika, seasoning and and tomato puree. Bring to the boil then turn down to a simmer and cook gently for at least 30 minutes.
    3. Whilst the pasta is cooking add the fresh chopped tomato to the sauce.
    4. Drain the pasta and transfer back into the pan to join the sauce. Coat the pasta well and serve with grated Parmesan cheese.

    This is one of the tastiest pasta dishes I have ever made!! I was looking for a recipe to make out of what foods id got available in the kitchen and i'd got them all for this recipe. I didnt fancy the look of the dish as such because i've never normally fancied pasta mixed in with the sauce together. Well what a surprise, it worked so well and was so tasty. From the time I had printed the recipe off and served it on the plate it was a mere 45 mins!! record breaking. its a 5 out of 5 from me and a big thumbs up!!  -  10 Feb 2012
