Favourite Eve's Pudding

    Still a favourite in our house most of the year. We prefer it with raisins and cinnamon, but these are optional. Custard isn't!

    Ingredients
    Serves: 4 

    • 4 cooking apples - peeled, cored and sliced
    • 1 teaspoon grated lemon zest
    • 1/2 teaspoon cinnamon
    • 2 tablespoons soft brown sugar
    • handful raisins (optional)
    • 200g self-raising flour
    • 200g butter, diced
    • 80g soft brown sugar
    • 4 eggs, beaten

    Method

    1. Preheat oven to 180 C / Gas mark 4.
    2. In a large baking dish, layer the apple slices evenly across the bottom, sprinkle over lemon, cinnamon, 2 tablespoons brown sugar and raisins (if using).
    3. Sieve flour and baking powder together in a bowl. Beat the butter, sugar and egg together until smooth and creamy. Fold in the flour mixture. Spoon on top of the apples and spread evenly.
    4. Bake for 30 -45 minutes until golden on top and springy when you touch it! Serve hot with custard.
