Butter beans in tomato sauce

    Comforting and healthy dish, another one of those Greek holiday reminders. I sometimes use dried butter beans, when I have time and have them in the cupboard. But they require soaking overnight as well as at least 1 to 1 1/2 hours cooking. I find the tinned variety is more convenient.

    Serves: 2 

    • 1 medium onion, sliced
    • 3 sprays Fry Light® Oil Spray
    • 1 tin chopped tomatoes
    • 1/2 teaspoon mild paprika powder
    • 1 small pinch sugar (optional)
    • salt and pepper to taste
    • 1 tin butter beans

    Prep:5min  ›  Cook:45min  ›  Ready in:50min 

    1. In a frying pan soften the onion in the Fry Light oil for 5 minutes.
    2. Add the tomatoes and let simmer on low heat for 15 minutes, while adding the spices, sugar, salt and pepper.
    3. Add the tin of butter beans. Let simmer for another 20 minutes.


    For a non-vegetarian option add some chorizo, or even some normal salami. I use reduced fat Lidl® Salami with Paprika. Delicious!!!
