Herring salad with beetroot

    This is originally a Scandinavian dish, which I remember from my Sweden summer holiday. Still love the flavour of the sweet, sour and earthyness! You must try this, it's delicious and so well balanced. Serve with dark rye bread.

    Serves: 2 

    • 3 pickled beetroots (vacuum packs)
    • 2 fillets pickled herring
    • 1 medium onion, finely chopped
    • 2 tablespoons low fat mayonnaise
    • salt and pepper to taste

    Prep:10min  ›  Extra time:15min chilling  ›  Ready in:25min 

    1. Chop the beetroot and the drained herring fillets and combine with the onion in a bowl. Add the mayonnaise and season with salt and pepper.
    2. Leave in fridge for 15 minutes or up to overnight for the flavours to combine.


    If you cannot find the pickled herring fillets, use Rollmops® herring instead. It's as delicious and you can also use the onion usually within that jar.

    Make it healthier

    I use low fat mayonnaise to make it healthier, but you are obviously more than welcome to use the full fat version.


    Herring is naturally high in Omega 3 oils, which is the good fat we require. New nationwide Food and Health standards suggest we should eat at least three times a week fish, so enjoy.
