About this recipe: Fab finger food or serve with fried rice. Pork ribs cooked in the slow cooker with bourbon, honey and spices.

Makes: 10 ribs

  • 10 pork spare ribs
  • 180ml bourbon (can also be made with sherry, whiskey or even beer)
  • 4 tablespoons BBQ sauce
  • 1 heaped tablespoon runny honey
  • pinch chinese 5 spice
  • 2 teaspoons smoked paprika
  • 2 tablespoons sweet chilli sauce
  • 1 heaped teaspoon chilli powder
  • 1 clove garlic, crushed
  • salt and pepper to taste
  • good pinch coriander
  • cornflour or arrowroot for thickening
  • 2 spring onions, finely sliced

  1. If you have time marinade the ribs for a couple of hours in all the ingredients except the cornflour and spring onions.Its not essential however.
  2. Combine all the ingredients except cornflour and spring onions. Mix well and place in the slow cooker with the ribs.
  3. Cook for 4-5 hours on high. 1/2 hour before serving, remove the ribs and keep warm. Mix a little cornflour with water to form a paste and stir into the juices. Cook on high to thicken slightly.
  4. Serve on a platter with the sauce poured over and garnished with the spring onions. Have plenty of napkins on standby.
