Cod with Parma ham

    Cod loins are topped with garlic and chillies and wrapped in Parma ham and served with a potato rosti. A nice garnish to serve with is vine ripened cherry tomatoes that have been roasted.

    Serves: 2 

    • 1 red onion
    • 4 garlic cloves
    • 2 green chillies
    • 1 (5cm) piece root ginger
    • 2 tablespoons olive oil
    • 1 tablespoon white wine vinegar
    • 2 cod loins
    • 1 packet good Parma ham
    • 1 large potato
    • 2 carrots
    • 1 brown onion
    • olive oil for frying

    1. Preheat the oven to 180 C / Gas 4. Finely chop the red onion, garlic, chilli and ginger. Add the olive oil and white wine vinegar and mix well.
    2. Coat the top of the cod loin with the mixture and wrap in the Parma ham.
    3. Place the cod loins in the oven and cook for about 15 minutes.
    4. For the rosti: grate the potato, carrot and brown onion, add to bowl and season well. Squeeze excess water out of the grated vegetables.
    5. Heat the olive oil in a frying pan and make 2 rostis from the grated vegetables. Cook on both sides until golden brown, 4 to 5 minutes each side.
    6. Finally plate up and enjoy.

    Lovely! I didn't use as much chilli as the recipe stated as I don't like much spice. But this was delicious  -  30 Jul 2017
