Swordfish with tomato and basil sauce

    Swordfish is a meaty fish, great with a fresh tomato and basil sauce. Serve the fish with mash and seasonal veg.

    Serves: 4 

    • 110g butter
    • 2 teaspoons minced garlic
    • 3 tomatoes, cubed
    • 120g fresh basil
    • 2 tablespoons fresh lemon juice
    • 2 swordfish steaks

    1. Preheat the oven to 180 C / Gas 4.
    2. Place 50g butter and 1 teaspoon minced garlic into a saucepan on a medium heat.
    3. When the butter is melted, stir in the tomatoes, basil and lime juice. Just before the mixture comes to the boil, turn to a low heat.
    4. In a smaller pan, melt the remaining butter and mix in the remaining minced garlic.
    5. Arrange the swordfish in a baking tin and drizzle over the garlic butter.
    6. Bake the swordfish for 7 minutes, then turn it oven and bake for another 7 minutes - until it is easily flaked with a fork.
    7. Spoon over the garlic butter from the baking tray and then spoon the tomato and basil mixture onto the fish.


    Don't overcook the fish or it will dry out.
