About this recipe: This hash is a little more refined than your usual slap dash corned beef hash - I have proudly served this to friends and seconds are always asked for!

Serves: 4 

  • 10 medium sized potatoes, peeled and diced into half inch cubes
  • 1 tin corned beef, diced into chunks (see tip)
  • 1 large onion, roughly chopped
  • 1 tbsp dried thyme
  • 1 tsp salt
  • 1 tsp ground black pepper (fresh milled is tastier)
  • 2 tbsp oil

Prep:10min  ›  Cook:30min  ›  Ready in:40min 

  1. Add potatoes to pan of salted boiling water and par boil for 8 minutes, drain and leave to dry out.
  2. Heat oil in a pan and add the onions, fry till slightly golden, remove from pan and add potatoes and thyme frying till crisp and golden. Try to retain their shape...don't be tempted to mash!
  3. Return the onions to the pan and add the corned beef, salt and pepper, stir gently so as not to break up the corned beef.
  4. Serve and enjoy!


The corned beef must be chilled well so it doesn't break up.
