About this recipe: A quick and easy sophisticated dish that will go down a bomb at dinner parties and can be made in mere minutes! I just love Heinz vegetable soup it is so adaptable and has everything you would need in a meal. The addition of Italian herbs, some wine and a piece of really fresh fish brings the whole dish together and worthy of any party or supper treat.

Serves: 4 

  • 2 Tins Heinz Vegetable soup
  • 4 pieces cod loin or other white firm fish.
  • A splash wine, red or white
  • 1 Handfull basil plus a few whole leaves for decoration.
  • 1 lemon
  • 4 dspns breadcrumbs
  • Drizzle olive oil
  • salt and pepper for seasoning

  1. Season the fish with salt and pepper and pan fry in a little olive oil for 2 minutes or less on each side(depends on the thickness.
  2. Squeeze a litle lemon juice over the fish and top with breadcrumbs.
  3. Heat the soup in a pan with a splash of wine, and add some basil. Simmer for a few minutes until the basil gives off it's flavour and the soup has reduced a little.
  4. Grill the fish in it's pan until the breadcrumbs are golden and crispy.
  5. Put the soup into a shallow dish, pop the fish on top, breadcrumb side up and drizzle over a little olive oil, decorating with a slice of lemon and a basil leaf.
