About this recipe: This is a quick and easy prepare ahead meal, ideal if you are going out for the afternoon and want a hot and satisfying dinner ready for you on your return. The meat is so tender and succulent when it is served that even the fussiest child (mine!) ate it without a grumble!

Serves: 4 

  • 2 carrots, sliced into rounds
  • 2 sticks celery, chopped
  • 4 loin pork chops
  • 1 crushed clove garlic
  • 1 tin Heinz mushroom soup
  • 1 teaspoon wholegrain mustard
  • 75 ml white wine (or chicken stock if preferred)
  • pinch herbes de provence
  • 1 tablespoon plain flour
  • pinch of salt and pepper
  • 4 large potatoes sliced
  • 1 onion sliced

  1. Prepare potatoes, celery, carrots and onion.
  2. Mix salt and pepper into the flour and dust your chops with it. Layer vegetables and meat into a casserole dish.
  3. Mix soup, wine, garlic, mustard and herbs together and pour over meat and vegetables.
  4. Cook for 20 minutes at 200 degrees celsius until simmering then reduce the heat to 140 degrees celsius for a futher 2 and a half hours.


This can also be cooked in a slow cooker if you are going out for the whole day.
