About this recipe: A fresh, unique twist on the usual tomato salsa. Great with your favourite Mexican food dishes or the perfect snack with corn chips or tortilla chips.

Serves: 4 

  • 6-8 medium mushrooms
  • 1 medium carrot
  • 4 tablespoons freshly chopped coriander
  • 1 small lemon
  • 1-2 teaspoons seasoning salt

  1. Dice the mushrooms and carrot; place in bowl. Add the chopped coriander.
  2. Squeeze lemon over the mushrooms and carrots, ensuring no seeds find their way into the bowl. Mix until well incorporated.
  3. Add seasoning salt, to your taste. Chill or serve immediately over burritos, on tacos, with corn or tortilla chips. Keeps in the fridge for 1 day.

I first tasted this salsa in a restaurant in Colorado. It is usually served with corn chips and refried beans. I could make a meal out of the mix. Since I like to eat in and no longer live in Colorado - this is as close as I can get to the real thing. - 08 Aug 2011
