A fresh, unique twist on the usual tomato salsa. Great with your favourite Mexican food dishes or the perfect snack with corn chips or tortilla chips.

- 6-8 medium mushrooms
- 1 medium carrot
- 4 tablespoons freshly chopped coriander
- 1 small lemon
- 1-2 teaspoons seasoning salt

- Dice the mushrooms and carrot; place in bowl. Add the chopped coriander.
- Squeeze lemon over the mushrooms and carrots, ensuring no seeds find their way into the bowl. Mix until well incorporated.
- Add seasoning salt, to your taste. Chill or serve immediately over burritos, on tacos, with corn or tortilla chips. Keeps in the fridge for 1 day.

I first tasted this salsa in a restaurant in Colorado. It is usually served with corn chips and refried beans. I could make a meal out of the mix. Since I like to eat in and no longer live in Colorado - this is as close as I can get to the real thing. - 08 Aug 2011
