About this recipe: A simple muffin recipe, perfect for beginners! These muffins are lower in fat than most. You can use three small bananas or about 400g bananas in total, weighed with their skins on.

Makes: 12 muffins

  • 250g self-raising flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon (optional)
  • 4 tablespoons sugar
  • 6 tablespoons sunflower or rapeseed oil
  • 6 tablespoons low-fat natural yoghurt
  • 6 tablespoons milk
  • 2 eggs
  • 100g chopped pecans
  • 2 large, ripe bananas, mashed

  1. Preheat the oven to 200 C / Gas 6. Grease a muffin tin or line with paper cases.
  2. Sift the flour, baking powder and cinnamon into a bowl and stir in the sugar. Whisk together the oil, yoghurt, milk and eggs and add to the flour mixture. Stir in the pecans and mashed bananas, then pour the mixture into the prepared cases.
  3. Bake for 20 minutes or until the muffins are well risen and a skewer inserted in the centre comes out clean.

Muffins tasted fine, especially right out of the oven, still warm. They are definitely low fat/low sugar, so I guess I can't expect them to taste as rich as a regular muffins - 13 Jan 2014
