Bacon stew

    A tasty stew, lovely for cold winter days, with potatoes, carrots and bacon. Serve with thick slices of crusty bread.

    Serves: 4 

    • 3 or 4 slices bacon
    • 450g potatoes
    • 3 carrots
    • 1 large onion
    • 600ml (1 pint) chicken stock

    1. Slice bacon into strips or chunks, fry off, drain and leave to cool.
    2. Peel potatoes, cut into medium size chunks and put in large pot or saucepan. Cut carrots into chunks and add to pot. Cut onions and add to pot.
    3. Pour stock over. Add the bacon. Bring to the boil, then turn to medium heat and simmer for 30 minutes or until potatoes are soft.
