Tomato, pepper and spinach soup

    I love a good soup for lunch and so do my kids. After trying many shop bought ones and not being totally satisfied, I made this one and I have clean bowls all round :)

    Serves: 6 

    • 1 red onion
    • 6 fresh tomatoes
    • 2 peppers
    • 1 medium potato
    • 3 lots frozen spinach
    • 1L chicken stock
    • 1 squeeze tomato puree
    • pinch salt and pepper to taste

    1. Chop all the vegetables and add them with the spinach into a large pan.
    2. Add a jug full of chicken stock. You can use as much or as little as you like, depending on whether you prefer thicker or thinner soup.
    3. Bring to the boil and simmer for about 45 minutes or until all vegatables are cooked.
    4. Blitz with a hand blender untill all lumps have gone.
    5. Add the tomato puree and optional salt and pepper.

    Freezing tip

    Freeze as soon as it's cool.
