    A deliciously indulgent chocolate fudge tart made using St Helen's Farm® goat's butter, milk and yoghurt.

    Serves: 6 

    • For the pastry base
    • 20cm cooked pastry case
    • 2 tablespoons raspberry jam
    • For the filling
    • 50g St Helen's Farm® goat's butter, softened
    • 50g caster sugar
    • 1 medium egg, beaten
    • 2 tablespoons St Helen's Farm® goat's milk
    • 75g self-raising flour
    • 100g white chocolate chips
    • 1 tablespoon cocoa powder, sieved
    • For the topping
    • 125g St Helen's Farm® natural goat's yoghurt
    • 25-50g plain chocolate, grated (optional)

    1. Preheat the oven to 180 C / Gas 4. Transfer pastry case to a baking tray, and spread jam in base.
    2. Place all remaining ingredients, except yoghurt and plain chocolate, in mixing bowl and beat for 1 to 2 minutes until well mixed. Spread over the jam layer.
    3. Bake for 30 minutes until risen and firm to the touch.
    4. Remove from oven and quickly spoon yoghurt evenly over sponge surface. Bake for a further 3 to 4 minutes.
    5. Serve warm or cold sprinkled with grated chocolate as a treat, or with fresh raspberries and custard as a dessert.

    Make it healthier

    Note: for a healthier alternative, substitute St Helen's Farm natural goat's yoghurt with St Helen's low fat goat's yoghurt.
