Greek-inspired veggie pasta salad

    Not 100% Greek, but a lovely pasta salad! Penne or fusilli is tossed with cucumber, cherry tomatoes, olives, feta, peppers and celery, then with your favourite Italian dressing. You can adjust the quantities easily here, depending on how many you are serving.

    Serves: 4 

    • Penne or fusilli pasta
    • Cucumber (peeled)
    • Cherry tomatoes
    • Black olives (preferably Kalamata)
    • Feta cheese
    • Celery
    • Yellow, red or green pepper
    • Italian salad dressing

    1. Boil pasta and allow to cool. To prevent past sticking together, coat in a few drops of olive oil before cooling)
    2. Cut up celery, cucumber and pepper into pieces the same size as the pasta.
    3. Mix veggies, tomatoes, olives and pasta together.
    4. Cut feta into chunks and keep about 1/3 aside.
    5. Throw in feta chunks, and crumble the remaining 1/3 over the salad with the salad dressing.
    6. Toss and serve!


    Make sure the pasta is not over-cooked, and fully cooled before mixing the salad together.
