Apple stuffed pork chops

    A bit of a messy recipe, but SO worth it in the end! Use your favourite bangers if you don't have Italian sausages.

    Serves: 3 

    • 4 Italian sausages
    • 125ml apple juice
    • 1 apple, chopped up into 1cm bits
    • 1-2 onions, chopped (optional)
    • 2 slices bread (preferrably rye)
    • 3 pork chops, thick cut
    • 1 teaspoon fennel seeds, or to taste
    • 1 teaspoon thyme, or to taste

    1. Cut sausages into smallish pieces and fry in a large frying pan with a little water (and onions if you choose to put them in).
    2. Add in fennel and thyme and fry until the flavours are nicely combined (about 2 minutes).
    3. Add in chopped apple and apple juice and fry until apple is softish.
    4. Toast the bread and cut into chunks before mixing with sausage mixture
    5. Cut open the prok chops and stuff with the sausage mixture.
    6. Pan fry or bake the stuffed chops until pork is cooked through.


    Mix more juice into the frying pan with the leftover stuffing for a great gravy!
