Great recipe, very easy to make. I used brown sugar instead of caster sugar & gluten free/wheat free flour. I'm gonna use some coconut milk mixed with the normal milk next time too. My loaf tin was big enough for the full mixture (2lb) I think it is. - 12 Feb 2012
Recipe says it makes 2 loaves so I halved it but then it wasn't enough! I believe this recipe makes 1 full-sized loaf or 2 small loaves. Anyway, didn't have enough mixture to fill the tin so I made it into muffins instead. Husband loves coconut and he liked them, so thumbs up I guess.
I also used whole wheat flour, home-made oat milk (instead of cows milk) and a little bit of creamed coconut to add more flavour. - 29 Oct 2011
