About this recipe: No messing around! Easy coconut loaf cake great for most occassions! After a couple of days, slice and toast lightly, spread with butter, and dust lightly with icing sugar.
You can add raisins or nuts too! Try adding 150g of either to the mixture along with the butter.
I suggest sprinkling some extra desiccated coconut over the top before baking.
Great recipe, very easy to make. I used brown sugar instead of caster sugar & gluten free/wheat free flour. I'm gonna use some coconut milk mixed with the normal milk next time too. My loaf tin was big enough for the full mixture (2lb) I think it is. - 12 Feb 2012

Recipe says it makes 2 loaves so I halved it but then it wasn't enough! I believe this recipe makes 1 full-sized loaf or 2 small loaves. Anyway, didn't have enough mixture to fill the tin so I made it into muffins instead. Husband loves coconut and he liked them, so thumbs up I guess. I also used whole wheat flour, home-made oat milk (instead of cows milk) and a little bit of creamed coconut to add more flavour. - 29 Oct 2011
