About this recipe: A nice change from regular crackers. These are easy to keep fresh in a sealed airtight tin or tupperware.

Baje Sofala, Mozambique

Makes: 1 loaf

  • 6 egg whites
  • 1 teaspoon almond extract
  • 160g caster sugar
  • 180g plain flour
  • 180g flaked almonds

  1. Whisk egg whites until stiff.
  2. Add in sugar bit by bit.
  3. Fold in sifted flour, almond extract and flaked almonds. Do not over mix! Keep the mixture as aerated as possible.
  4. Pour mix into a loaf tin and bake for 30 minutes at 180 C / Gas 4.
  5. Next day, slice into thin pieces and dry out at 100 C in the oven for about 10 minutes - or until toasty.


Lovely to serve with Brie cheese, jam, or both!
