    About this recipe: A rich, savoury cheesecake that makes a perfect starter to a dinner party or a main dish with salad.

    Baje Sofala, Mozambique

    Makes: 1 cheesecake

    • For the base
    • 60ml butter
    • 1/2 packet savoury cheese biscuits or cheese crackers
    • For the filling
    • 10g gelatine
    • 25ml water
    • 125ml cream, whipped
    • 2 egg whites, beaten
    • 1 spring onion, chopped
    • 250g smooth cream cheese
    • 125g smoked salmon, finely chopped
    • 100ml plain yoghurt
    • 1/2 lemon, zested

    Prep:30min  ›  Extra time:8hr chilling  ›  Ready in:8hr30min 

    1. For the cheesecake base: Crush and mix together butter and savoury cheese biscuits. Press into a 20cm tin and chill for 4 hours minimum.
    2. For the filling, dissolve gelatine in water, set aside.
    3. In a separate bowl whip the cream, set aside.
    4. In another bowl, whip egg whites until stiff, and set aside.
    5. Mix all remaining ingredients together, then stir in gelatine mixture.
    6. Fold in whipped cream, then stiff egg whites.
    7. Pour this mixture onto crust and chill for an additional 4 hours.

    Other ideas

    Add in some chopped up dill for some extra flavour.
