Vegetarian colourful fruity savoury rice

    This rice dish is ideal for a healthy dinner - add chicken, prawns or whatever you like to make it a non vegetarian meal...very colourful and fruity, kids will love it too.

    • 400g long grain easy cook rice
    • 1 red pepper finely diced
    • 1 green pepper finely diced
    • 1 yellow pepper finely diced
    • 1 tin pineapple slices diced
    • 1 apple finely diced
    • 2 cloves garlic, grated
    • 1tsp dried ginger
    • 1 tin chopped tomatoes
    • 1tsp ground coriander
    • Bunch parsley
    • 1 onion finely diced
    • Handful raw cashew nuts

    1. Rinse rice till water runs clear,put in a large pan and put in plenty of boiling salted water,drain when tender and run under cold water,set aside
    2. Heat some oil in a wok or large frying pan, add onion, peppers, apple, ginger, coriander and garlic; fry till softened, add the rice and stir thoroughly.
    3. Add in the tomatoes, cashews and pineapple and combine thoroughly. Add salt and pepper to taste. Stir through chopped parsley to your liking at end of cooking
