About this recipe: This is a really easy and tasty dish, perfect for whipping up on an evening when there's not a lot of time to spare. The creme fraiche complements the sweet chilli sauce and shellfish beautifully.

Serves: 4 

  • 1.25L water
  • 125g dry penne pasta
  • 1 large white onion, diced
  • 8 medium button mushrooms, sliced
  • 3 large garlic cloves, crushed
  • 115g cooked prawns or lobster or any other shellfish
  • 1 teaspoon chopped parsley
  • 350g creme fraiche
  • 100ml good quality sweet chilli sauce, such as 'Exotic Food Sweet Chilli Sauce'

Prep:5min  ›  Cook:15min  ›  Ready in:20min 

  1. Boil water and add pasta; simmer for 10 to 15 minutes or until al dente.
  2. Saute diced onions for 3 to 4 minutes, then add chopped mushrooms and garlic. Cook for further 5 minutes until mushrooms are tender. Add choice of seafood and warm through, then add parsley.
  3. Stir in creme fraiche, then simmer for 2 to 3 minutes before you add sweet chilli sauce. Once penne is cooked, add to sauce and serve straight away.
