Sausage tomato casserole

    A lovely sausage casserole slowly cooked in the oven or a slow cooker. Perfect to warm up any tea time :)

    Serves: 4 

    • 12 sausages
    • 2 peppers
    • 1 onion
    • 2 tins chopped tomatoes
    • 1 package fresh or frozen spinach
    • salt and pepper to taste

    Prep:30min  ›  Cook:6hr  ›  Ready in:6hr30min 

    1. Brown off the sausages in a frying pan over medium heat. Chop peppers and onion and add with the sausages into a slow cooker or casserole dish.
    2. Add 2 tins of chopped tomatoes and half a tin of water.
    3. Add your spinach and stir all together.
    4. Cook on a low heat in the oven if using a casserole dish or a low setting on your slow cooker and leave to cook for 5-6 hours.
    5. Serve up with rice or mash.
