Carrot cheese bake

About this recipe: Carrots, cheese and tomatoes. That's it! This is lovely served as an side dish with a pork chop or sometimes we have it instead of potatoes.

Makes: 4 servings

  • 500g cooked mashed carrots
  • 1 tin chopped tomatoes
  • big squirt tomato puree
  • 150g grated cheese

Prep:10min  ›  Cook:20min  ›  Ready in:30min 

  1. Preheat the oven to 180 C / Gas 4.
  2. Cook and mash some carrots or use any that you have left over from a previous meal.
  3. Place a layer of carrots in an ovenprooof dish. Then add a layer of tomatoes (I sometimes add a squirt of tomato puree to thicken the juice up a bit. Then add a layer of grated cheese. Then repeat all of the above.
  4. Put the bowl into the oven and bake until warmed through and the cheese has melted and gone brown, about 20 minutes.

Other ideas

I've also tried adding in swede and/or onions or whatever we have to hand.
