Preheat the oven to 200 C / Gas 6.
**You can actually brown the breast at this stage if you prefer by frying them on a high heat in a frying pan with a touch of oil, this makes no difference to the flavour, the lemon stops the breasts from drying out**
Place chicken on baking tray. Baste both sides of the chicken with the olive oil.
Score chicken to let lemon juice soak in.
Take half a lemon and squeeze over chicken, then cut slices of lemon and place one on top of each breast.
Bake in oven until juices no longer run pink, about 30 minutes . . . done !
I like it with my mushroom sauce that I have a recipe up for, but can be served how ever you like, it's succulent enough just to have on its own on a bed of rice for the really diet conscious.
