Russell's 20 second prep - baked lemon chicken

    A fantastic, simple, healthy, scrumptious option for chicken. This is so simple, and if you haven't tried it before, you won't believe how succulent and tasty it turns out - the zingy lemon really compliments the chicken.

    Serves: 2 

    • 2 chicken breasts
    • 1 lemon
    • 1 teaspoon olive oil

    1. Preheat the oven to 200 C / Gas 6.
    2. **You can actually brown the breast at this stage if you prefer by frying them on a high heat in a frying pan with a touch of oil, this makes no difference to the flavour, the lemon stops the breasts from drying out**
    3. Place chicken on baking tray. Baste both sides of the chicken with the olive oil.
    4. Score chicken to let lemon juice soak in.
    5. Take half a lemon and squeeze over chicken, then cut slices of lemon and place one on top of each breast.
    6. Bake in oven until juices no longer run pink, about 30 minutes . . . done !


    I like it with my mushroom sauce that I have a recipe up for, but can be served how ever you like, it's succulent enough just to have on its own on a bed of rice for the really diet conscious.
