About this recipe: This Greek garlic dip is a cousin to the famous garlic yogurt dip known as tzatziki and is an excellent accompaniment for vegetable and fish dishes.

Serves: 6 

  • 3 large potatoes, peeled
  • 7 garlic cloves, crushed
  • 80ml lemon juice
  • salt and pepper to taste
  • 120ml olive oil

  1. Boil potatoes until soft then drain them and put them in a medium to large sized mixing bowl.
  2. Using a potato masher, blender, or a large fork, proceed to thoroughly mash the potatoes.
  3. Add the crushed garlic, lemon juice, salt and pepper, and resume mashing and stirring to incorporate all the ingredients.
  4. Slowly drizzle in olive oil while stirring until a creamy consistency is achieved.Try to ensure that there are no lumps of potato remaining in the mix.


Add is more garlic if you're a garlic lover!


May need to adjust the amount of olive oil depending on the size of the potatoes. Can play with the balance of flavours between the olive oil and lemon juice.
