    About this recipe: In this traditional American Thanksgiving recipe, sweet potatoes become even sweeter with a topping of baked marshmallows.

    Ingredients
    Serves: 4 

    • 700g sweet potatoes, peeled and cut into chunks
    • 2 tablespoons butter, melted
    • 2 tablespoons honey or brown soft sugar
    • 1 egg, well beaten
    • 3/4 teaspoon salt
    • marshmallows (enough to cover the top of a casserole dish)
    • 2 tablespoons butter

    Method

    1. Place sweet potatoes in a saucepan, cover with water and bring to the boil. Reduce the heat to a simmer, and cook until the potatoes are tender, about 20 minutes. Drain and mash.
    2. Preheat the oven to 180 C / Gas 4.
    3. Beat together with an electric mixer the melted butter, honey, mashed sweet potatoes, egg and salt.
    4. When mixture is smooth, transfer to a greased casserole dish.
    5. Dot with the remaining 2 tablespoons of butter and top with the marshmallows.
    6. Bake until the tops of the marshmallows are golden brown, about 15 minutes. Serve immediately!

    Tip

    For autumn flavours, add nutmeg and/or cinnamon :)
