Apricot cordial

About this recipe: Makes any glass of soda water so much better! Use as a normal cordial. Add 1 tablespoon per glass.

Ingredients

Makes: 1 Bottle

  • 500g apricots, stoned and chopped
  • 300g light brown soft sugar
  • 2 lemons, juiced
  • 300ml water

Method

Prep:15min  ›  Cook:15min  ›  Ready in:30min 

  1. Join ingredients into a pot and bring to a boil.
  2. Simmer for 15 minutes until a thin syrup is formed and fruit breaks down.
  3. Allow to cool, then press through a sieve.
  4. Bottle the syrup and keep in the fridge.
