Vegetarian Chickpea Burgers

    These chickpea burgers are a delicious vegetarian alternative to beefburgers. This recipe makes 12 small or 6 large burgers.

    Serves: 12 

    • 1 1/2 (400g) tins chickpeas
    • 1 onion, chopped
    • 1 tablespoon dried thyme, or to taste
    • salt and freshly ground black pepper to taste
    • 75g (3 oz) dried breadcumbs
    • 2 eggs, beaten
    • 4 tablespoons vegetable oil

    1. Working in small batches, in a blender or food processor, purée the chickpeas until the mixture is a paste. Add onions, thyme, salt and pepper to the mixture; mix well. Add breadcrumbs and egg; mix well.
    2. Form the chickpea mixture into burgers.
    3. Heat oil in a large frying pan over medium heat. Fry burgers until each side is golden brown.

    Something else. I think the 3 hours cooking time might be a misprint! They did take about 15mins to make, but if I fryed them for that long there would be nothing left. For new cooks, just fry until golden brown.  -  19 Oct 2010


    Used different ingredients. I added some cooked quinoa for a better texture, it worked well and was very popular, even with the carnivours  -  05 Jun 2011


    Used different ingredients. These are a godsend for a vegetarian! I would certainly NOT recommend all the bread. Used breadcrumbs and ran out. Thank god, next time I'll use less than that. Very good, just too "stuffingish". Otherwise I great idea. Also, 1/8 tsp thyme was more than enough for me. thanks  -  24 Jul 2008
