Chunky chocolate cookies

    Effortless chocolate cookies! Once you make the cookie dough and chill it, these are just sliced and baked.

    Makes: 20 cookies

    • 250g dark cooking chocolate
    • 75g white cooking chocolate
    • 130g macadamia nuts
    • 225g butter
    • 330g light brown soft sugar
    • 1 egg
    • 1 teaspoon vanilla extract
    • 1 teaspoon baking soda
    • 128g plain flour

    1. Cut both the chocolates into coarse chunks and chop macadamia nuts and set aside.
    2. Cream butter and sugar together well, then add the egg and vanilla.
    3. Mix in baking soda, flour until well combined. Throw in chocolate and nuts.
    4. Roll dough into a "sausage", wrap in cling film and chill dough in fridge for 1 hour.
    5. Preheat the oven to 180 C / Gas 4.
    6. Remove from fridge, slice into cookies and place on well greased and floured baking tray.
    7. Bake each batch until lightly golden, 8-11 minutes.


    Can add more chocolate if you wish, or use only dark/white chocolate, or even add in some cocoa powder or melted chocolate into the mix for some extra sweetness!

    Okay so I think there might be something wrong with the measurements or something. Maybe there was a typo? I followed the recipe exactly and the cookies didn't bake properly at all. They were completely inedible. I was disappointed but I realise that there's been some kind of error as I double checked that I had used the correct quantities etc.  -  30 Mar 2015
