    About this recipe: Serve on crusty wholemeal rolls or pitta bread with lettuce and tomato. Other raw veg can be used instead of celery.

    Ingredients
    Serves: 3 

    • 1 1/2 (400g) tins chickpeas, drained and rinsed
    • 1 stalk celery, chopped
    • 1/2 onion, chopped
    • 1 tablespoon mayonnaise
    • 1 tablespoon lemon juice
    • 1 tablespoon chopped fresh dill
    • salt and freshly ground black pepper to taste

    1. Pour chickpeas into a medium size mixing bowl and mash with a fork. Mix in celery, onion, mayonnaise, lemon juice, dill, salt and pepper.

    Altered ingredient amounts. add 6 chopped grape tomatoes to make a little less dry less mayo for less calories - 30 Aug 2010

    I used 6 cherry tomato's, quartered and about 6 sliced radishes also. Now, I'm not a vegetarian but I have to say this is absolutely lovely. A really different bite. I used this on pitta breads that I had toasted until they had just puffed up in the toaster, no longer. - 25 Nov 2010
