About this recipe: Perfect for the chocolate lover! You can use chocolate biscuits for the base for extra chocolate taste!

Serves: 6 

  • For the crust
  • 2 teaspoons cocoa powder
  • 100g butter, melted
  • 250ml biscuit crumbs
  • For the filling
  • 50g chocolate
  • 1 tablespoon cocoa powder
  • 250ml milk
  • 2 eggs, separated
  • 100ml caster sugar
  • 2 teaspoons gelatine
  • 50ml water
  • 1/2 teaspoon vanilla extract
  • 125ml whipping cream, whipped

  1. Crust: Mix ingredients and press into a 20cm dish and chill while preparing filling.
  2. Filling: Melt chocolate and cocoa powder in milk.
  3. Beat the yolks with sugar and whisk into milk mixture. Heat until thick, continuously whisking, but do not boil!
  4. Dissolve gelatine with 50ml of water in a separate container, then add in vanilla.
  5. Remove saucepan with the chocolate and mix in the gelatine mixture.
  6. Allow this to cool.
  7. In a separate bowl, whisk egg whites until stiff, then fold into chocolate mixture. Fold in the whipped cream.
  8. Pour filling onto crust and cool in the fridge.

It was quite nice, easy to make, and we made it dairy free and it set well. We forgot to add the sugar and egg yolk until the end, but it still worked. Actually it came out in three layers, layer one was mousse, layer too like a delicious thick chocolate pudding and layer three the biscuit. Really great. It's a good idea to use expensive chocolate or you really taste it. - 02 Jan 2012
