Spinach and goats cheese stuffed courgettes

    Something I threw together which turned out to be really successful! Perfect for when you have fresh courgettes in the garden.

    Serves: 4 

    • 4 medium courgettes
    • 1 teaspoon ground cumin
    • 1/2 teaspoon smoked paprika
    • 3 spring onions, chopped
    • 3 slices goats cheese
    • 4 handfuls spinach
    • 60g grated mature Cheddar cheese
    • 8 walnut halves

    1. Preheat the oven to 180 C / Gas 4.
    2. Scoop out centres of courgettes after topping and tailing and cutting in half lengthways. Chop removed flesh into small pieces.
    3. Flash fry flesh with spices, chopped spring onions.
    4. Cut goats cheese into small pieces, add to pan with spinach until just wilted.
    5. Pile mixture into courgette shells. Top with broken up walnuts and sprinkle with Cheddar.
    6. Place courgettes into baking tray. Add 4 teaspoons water to bottom of tray.
    7. Bake in the preheated oven for 20 minutes.
