Walnut cheese biscuits

    A Greek inspired biscuit with the flavours of feta cheese and walnuts. These are nice for a nibble with some wine.

    Makes: 38 biscuits

    • 40g walnuts
    • 115g plain flour
    • salt and pepper
    • 115g butter, chilled and cubed
    • 115g feta cheese, crumbled
    • 1 egg, beaten for glazing

    1. Preheat the oven to 190 C / Gas 5. Line a baking tray with parchment.
    2. Coarsely grind the walnuts in a food processor; remove and set aside.
    3. Place flour, salt, pepper and butter in the food processor and process in short bursts so that the mixture resembles breadcrumbs.
    4. Add in feta and walnuts, and form a dough, handling lightly.
    5. Roll out the mixture and make biscuits using a 6cm cutter, or simply slice into squares. Place on baking tray and brush tops with beaten egg.
    6. Bake for about 10 minutes, then cool on a wire rack.
