Claudia's blueberry muffins

    These easy blueberry muffins are delicious, ready in a few simple steps and so moreish that I’ll have to quadruple the quantities for guests at my Macmillan coffee morning. --Claudia Winkleman

    Serves: 10 

    • 110g (4oz) half fat sunflower spread
    • 110g (4oz) caster suger
    • 2 eggs beaten
    • 150ml (1/4 pint) semi-skimmed milk
    • 1 teaspoon natural vanilla extract
    • 300g (10oz) plain white flour
    • 2 teaspoons baking powder
    • 110g (4oz) fresh blueberries

    Prep:20min  ›  Cook:35min  ›  Ready in:55min 

    1. Preheat oven to 150 C / Gas 2. Line a muffin tray with 10 muffin papers.
    2. In a large mixing bowl beat together the sunflower spread, sugar, eggs, milk and vanilla until light and fluffy.
    3. Add the flour and baking powder beating well until smooth in consistency.
    4. Stir in the blueberries and spoon the mixture into the prepared muffin cases.
    5. Bake in a preheated oven for 30-35 minutes until firm to the touch.
    6. Allow to cool, remove from the tin and dust with icing sugar.

    I loved this recipe so much, i haven't ever tried blueberry muffins before so i was a bit apprehensive, especially at the stage where you beat the butter and milk etc together, but i beat the mixture very very well at the next step until the mixture was smooth and everything worked out perfectly.     How can you whisk together fat and liquid, until fluffy NEVER, because it just curdles, so not good. Val  -  24 May 2013
