Simple cupcake mix

    A very simple sponge cake mixture with a hint of vanilla. Great as a blank canvas for a delicious topping!

    Serves: 10 

    • 150g self-raising flour
    • 150g caster sugar
    • 150g butter
    • 3 free range eggs
    • 1 teaspoon vanilla extract (optional)

    Prep:10min  ›  Cook:25min  ›  Extra time:15min cooling  ›  Ready in:50min 

    1. Preheat the oven to 190 C / Gas 5. Line cake tins with paper cups.
    2. Sieve flour and sugar into mixing bowl and add all the butter, eggs and vanilla.
    3. Mix all ingredients until the mixture becomes smooth.
    4. Spoon mixture into paper cups until each cup is half full.
    5. Bake until a knife inserted into the center of the cupcake is clean when removed, about 25 minutes.
    6. Leave to cool and decorate as you wish!

    Nice cupcakes, I added chocolate chips instead of the vanilla and they were delicious! Only thing is, they didn't need as long as 25 minutes, they only took about 15-20 so be careful! Otherwise, brilliant cupcakes that taste yummy!  -  13 May 2014
