Supreme scrambled eggs

    Creamy scrambled eggs with a hot toasted muffin! This is a very satisfying breakfast, lunch or snack.

    Serves: 4 

    • 6 eggs
    • 125ml semi-skimmed milk
    • butter as needed
    • 4 English muffins

    1. Crack the eggs into a large mixing bowl. Make sure there is no shell in the bowl. If you find one, simply take it out.
    2. Add the milk. Whisk together well until thoroughly combined.
    3. Put a saucepan on a medium heat and add the butter. When the butter sizzles, add ALL of the egg mixture. Continually stir.
    4. When the eggs begin to thicken, turn off the heat. Keep stirring until you have the desired consistency. The should be creamy, but not too dry.
    5. Split the muffins in two. Put them under a medium grill until golden. When golden, remove the muffins from the grill. Butter the muffins.
    6. Top the toasted muffin with the scrambled egg. Enjoy!

    Other ideas

    Add salt and pepper to season. Take the saucepan off the heat if the eggs cook too quickly.
