About this recipe: Portuguese recipe for baked cod with potatoes, tomatoes and lots of olive oil. You need to soak the cod in water overnight to remove the salt.


Serves: 10 

  • 1kg salt cod (soaked overnight - see note below)
  • 2 limes, juiced
  • salt to taste
  • 500g potatoes, cut into thick slices
  • 3 tomatoes, cut into 8 pieces
  • 2 large onions, cut into 8 pieces
  • 2 fresh bay leaves
  • 2 tablespoons olive oil
  • 50g chopped black olives
  • chopped parsley to taste

  1. Season the cod with lemon juice and salt. Let stand for one hour.
  2. Preheat the oven to 180 degrees C.
  3. In a baking dish, arrange layers of cod, potatoes, tomatoes and onion. Place the bay leaves on top.
  4. Drizzle with olive oil, season with a bit of and salt and bake for about half an hour.
  5. Remove from the oven, add the olives and parsley and return to oven for about 3 more minutes. Serve hot.

Salt cod:

This is dried, salted cod that needs to rehydrate in cold water for 24 hours. It's also reccommended to change the water four times during this soaking period.
