Baked leftover rice and vegetables

    Simply mix any leftover rice and vegetables you have, add some mushrooms, mozzarella and Parmesan cheese and bake it in the oven - bingo! The really good thing is that it tastes different every time depending on what leftover veg you have. I have just given rough estimates for ingredient measures.

    Ingredients
    Serves: 8 

    • 650g leftover cooked rice
    • 100g cooked broccoli, diced
    • 100g cooked cauliflower, diced
    • 100g cooked carrots, finely diced
    • 60g mozzarella cheese, cut into cubes
    • 80g tinned mushrooms, drained
    • 2 tablespoons grated Parmesan cheese
    • butter, for greasing the baking dish

    Method

    1. Preheat the oven to 180 C / Gas 4. Grease a large baking dish and set aside.
    2. In a large bowl, mix rice, broccoli, cauliflower, carrots, mozzarella and mushrooms. Spread mixture on the bottom of prepared baking dish; sprinkle Parmesan cheese over the top of the rice mixture.
    3. Bake in preheated oven for 30 minutes, or until cheese has melted and is golden brown on top. Serve hot.

    Note

    You can replace the mushrooms with tomatoes if you prefer.
