Instant pot beef ribs

    These beef ribs in tangy sauce can be cooked in the instant pot or pressure cooker.

    Serves: 5 

    • 1.5kg beef short ribs ('Jacob's ladder'), cut into 4x7cm pieces
    • 1 1/2 teaspoons salt
    • 120ml tomato ketchup
    • 80g onion, minced
    • 120ml water
    • 60ml red wine or red wine vinegar
    • 1 teaspoon paprika
    • 1 teaspoon prepared mustard

    1. Brown the rib pieces in the instant pot or pressure cooker over medium high heat. Remove the meat, discard accumulated fat and return the ribs to the pot.
    2. In a bowl stir all other ingredients together and pour mixture over meat. Close the instant pot or pressure cooker. Once the pressure has built up, reduce heat to minimum and cook for 30 minutes.
    3. Turn off heat and if using a pressure cooker, remove from heat. Use the quick pressure release on your instant pot, or let cold water run over your pressure cooker. Open pot and serve.
